Post-Holiday Cubano

Leftover ham? Mix mayo with a dash of cayenne, spread on insides of good sliced bread. Place a good slice of ham on one side, top with large grated cheese (Jarlesberg, cheddar, whatever. Top with sliced pickles (trust me.) Close the bread, butter the outides and press onto a griddle until flat and light brown.
